Cod liver is considered poor man's foie gras, with less ethical concerns. Monk fish liver, also called ankimo at Japanese restaurant is a delicacy. The canned cod liver can often be prepared similarly with Asian technique, with lime, ponzu and scallion.

My market didn't have beef liver yesterday but they did have a whole beef heart. $5.49/lb. Salt and pepper skillet fried on butter, it was good. Has a sausage/hot dog kind of texture. Crazy amount of riboflavin. Still no gout with the increased liver intake.

KFC recently dropped chicken livers, much to the disappointment of many people in the South.

Yum - this thread is great. I thought I was the only person who liked liver. The Indian spices idea are so intriguing...I’d ask fordrmka26’s mom’s recipe but I cannot get lamb liver around here unless I have one of our herd slaughtered. Not worth it to me - that’s a lot more personal than the market!

growing up my old man was very much in the (portal) vein of not only killing his own food but eating everything possible.

after that formative experience, i stick with the basics.

i love to hunt but have zero interest in liver, heart, or really any organ other than skeletal muscle.

Not a big fan of heart, but liver is awesome. Esp calf liver... fried up medium rare with onions, or Turkish style deep fried in cubes... amazing.
Never seen it in Indian cuisine would love to try it.

Been donating blood regularly for 20+ years. My Hgb usually ranges between 13.5-14. After I started eating liver, it spiked to 15.8 at my last draw.

Not a huge fan but like chicken livers when cooked as dirty rice.

No, for some reason makes me think about work too much, ordering liver panels and hepatitis panels.

I've never been a fan of eating a filtering organ.

One option would be to search for places near you that sell halal meat (kosher meat that Muslims eat). They will definitely carry lamb and has a good chance of carrying lamb liver. If it is not there in KY it will definitely be in Nashville.

Heart is pretty chock full of nutrients. Looking at an actual beef heart can be off putting, but once you slice it in pieces, and spice it up, it has a hot doggy texture. But I've been looking for kidney, but can't find it.

Phase 1 and phase 2 detoxification are not the same as filtering. Liver is a great source of many bioavailable vitamins and minerals.

I've got some sitting in my freezer waiting for me to eat it. I also recommend the liverwurst.
