Cod liver is considered poor man's foie gras, with less ethical concerns. Monk fish liver, also called ankimo at Japanese restaurant is a delicacy. The canned cod liver can often be prepared similarly with Asian technique, with lime, ponzu and scallion.

My market didn't have beef liver yesterday but they did have a whole beef heart. $5.49/lb. Salt and pepper skillet fried on butter, it was good. Has a sausage/hot dog kind of texture. Crazy amount of riboflavin. Still no gout with the increased liver intake.

Yum - this thread is great. I thought I was the only person who liked liver. The Indian spices idea are so intriguing...I’d ask fordrmka26’s mom’s recipe but I cannot get lamb liver around here unless I have one of our herd slaughtered. growing up my old man was very much in the (portal) vein of not only killing his own food but eating everything possible.
after that formative experience, i stick with the basics.
i love to hunt but have zero interest in liver, heart, or really any organ other than skeletal muscle.
